Baked Apples

When I was a little kid, every time I asked my mother what was for dessert, she would say… "Have an apple". There was no chocolate cake, no strawberry ice cream or coconut cream pie, only baked apples. This is incredibly frustrating to a kid. I was the only one at school who had yogurt in their lunchbox!

Now as a grown up, when the weather starts to get chilly I have this undeniable craving for a soft sugary baked apple. Since they are so simple to make, I usually make one big batch at a time.

You can change around the ingredients to suit your taste. No matter what, the formula is the same; apples, seasoning and ¾ cup liquid. They will last 4 days in the refrigerator

Ok, let's get started…

  • 4 Large Rome or Baking Apples, cored and tops shaved off
  • 3/4 Cup of Ginger Ale
  • Sprinkle of Cinnamon
  • Sprinkle of Sugar
Heavy Cream

Preheat oven to 350º.

Place cored apples in a deep baking dish.

Pour in ginger ale and sprinkle tops of apples with cinnamon and sugar.

Cover with heavy-duty tin foil and bake for 30 minutes.

Remove foil and bake for another 10.

Serve in a deep bowl, with a shot of heavy cream on top. (Ice cream isn't a bad idea either).

Enjoy with a spoon.

(1 Packet of Cherry Jell-o sprinkled on top and Black Cherry Soda as the liquid)
